Slow cooker barbacoa pork is a popular Mexican dish that is traditionally prepared by slow-cooking beef with a variety of spices and herbs. This recipe puts a spin on the classic by using pork loin instead and cooking it with a touch of sweetness and heat from brown sugar and chipotle chiles. The result is a melt-in-your-mouth pork that is perfect for filling up tacos, burritos, or serving with rice and beans for a flavorful family meal.

Instructions

1.Mix together 1 tablespoon of salt, 1/2 tablespoon black pepper, and 2 teaspoons garlic powder in a small bowl.
2.Rub the spice mix all over the pork loin and place it in your slow cooker.
3.In another bowl, mix together 12 ounces of Coke Zero, 1/4 cup of brown sugar, and 1/4 cup of water. Pour the mixture over the pork in the slow cooker.
4.Add the sliced green chilies, tomato sauce, diced chipotle chile, remaining 2 teaspoons of garlic powder, remaining 1 tablespoon of salt, remaining 1/2 tablespoon black pepper, and cumin to the slow cooker.
5.Cover the slow cooker and cook on low for 8-10 hours, or on high for 4-6 hours, until the pork is tender and falls apart easily.
