Ingredients

3 cups water

1/2 teaspoon ground mixed peppercorns

Instructions

1.Rinse barley with cold water in a sieve and drain.
2.Heat olive oil in a skillet over medium heat and cook diced onion, diced celery, diced carrot, and finely chopped garlic for 4-5 minutes or until the vegetables are soft.
3.Transfer the vegetables to the slow cooker.
4.Add in the broth, water, milk, and barley.
5.Stir in white mushrooms, brown beech mushrooms, oyster mushrooms, dried shiitake mushrooms, and dried black mushrooms.
6.Add in salt and ground mixed peppercorns.
7.Cover and cook on the ‘Low’ setting for 6-8 hours or until the barley is tender and the soup is hot.
8.Mix chopped parsley and thyme leaves in the soup and serve hot with croutons or bread slices.
