Ingredients

8 lamb shanks
2 tablespoons seasoned flour
2 tablespoons olive oil
1 onion , coarsely chopped
1 carrot , coarsely chopped
1 celery rib , chopped
1 red chili pepper , finely chopped
400 g brown lentils , rinsed and drained
400 g chopped tomatoes
1 cup water
1/2 cup red wine
1/2 cup chopped fresh parsley

Instructions

1.Coat lamb shanks in seasoned flour
2.Heat oil in a pan and cook lamb shanks until browned on both sides
3.Remove lamb shanks and sauté onion, carrot, celery, and red chili pepper until softened
4.Add chopped tomatoes, brown lentils, water and red wine and simmer for 5-10 minutes
5.Return lamb shanks to the pan, cover and cook on low heat for 3-4 hours
6.Serve with chopped fresh parsley
