2 tablespoons olive oil
8 garlic cloves , sliced
10 sprigs fresh rosemary or 10 sprigs fresh thyme
8 large lamb chops
salt and pepper
2 heads garlic , cut horizontally
3 cups dry white wine
2 tablespoons all-purpose flour
Slow-cooked lamb chops with white wine and garlic is a perfect meal for a Sunday night dinner party or family gathering. The lamb is so tender that it falls off the bone, and the gravy made from the cooking liquid is savory and flavorful. The white wine and garlic complement the lamb perfectly, creating a meal that will be sure to impress. Serve this dish with a side of roasted vegetables, potatoes, or creamy polenta to complete the meal.

Instructions

1.In a pan, heat the butter and olive oil over medium-high heat.
2.Add the sliced garlic and rosemary or thyme sprigs, and let the mixture cook for about a minute.
3.Season the lamb chops with salt and pepper, and add them to the pan. Cook on each side for about 2-3 minutes, until browned.
4.Add the whole garlic heads, cut side down, to the pan. Pour in the white wine and bring it to a simmer.
5.Cover the pan with a lid and allow the lamb to cook on low heat for about 2 hours, or until the meat is very tender.
6.Remove the lamb and garlic from the pan and set them aside. Strain the liquid into a separate bowl to remove the herb sprigs and any bits of lamb or garlic. Discard any solids.
7.Return the strained liquid back to the pan and heat over medium heat. Sprinkle in the flour and whisk until the liquid thickens into a gravy.
8.Serve the lamb hot, drizzled with the gravy and garlic cloves on top.
