Ingredients

2 kg lamb shoulder ( boned )
1/2 cup harissa
1/2 cup vegetable oil ( or olive oil )
12 baby potatoes ( quartered )
4 oranges ( medium )
1 tablespoon Dijon mustard
1 garlic clove ( minced )
2 carrots ( large cut into matchsticks )
2 cups watercress ( sprigs )
1/2 cup coriander ( sprigs cilantro )
1/2 cup mint ( leaves torn )
2/3 cup yogurt ( natural to serve )
Slow-Cooked Harissa Lamb is a North African dish that is becoming increasingly popular in households around the world. Instructions

1.Preheat oven to 150°C fan-forced ( 170°C conventional )
2.In a bowl combine harissa, oil, mustard, orange juice and zest, garlic, salt and pepper.
3.Coat the lamb with 2 Tbsp harissa mix, season well.
4.In a large cast iron casserole, heat some oil. Cook the lamb, turning until browned.
5.Add potatoes, carrots, and remaining harissa mix. Pour over water.
6.Roast in the oven for 3 to 4 hours until lamb is tender.
7.The lamb can be served with any vegetables of your choice and top it with fresh herbs, yoghurt, and orange zest.
