100 g short grain pudding rice
450 ml full-fat milk
284 ml pot double cream
227 g clotted cream
1 split vanilla pod
85 g golden caster sugar
freshly grated nutmeg

Instructions

1.Preheat your oven to 150C/130C fan/gas 2.
2.Grease a large ovenproof dish with butter.
3.Rinse your rice and place it into the greased dish.
4.In a saucepan, heat your milk, cream, and clotted cream on medium heat. Add vanilla pod and sugar. Cook until the sugar dissolves.
5.Remove the vanilla pod and pour this mixture over the rice. Stir to evenly distribute the rice.
6.Dust the top of the pudding with grated nutmeg.
7.Bake for about 2 hours, or until it turns golden brown. Serve hot or cold.
