Ingredients

2 cups peanut oil for frying
1 pound peeled and deveined large shrimp
1/4 cup cornstarch
2 large cloves garlic , minced
1/2 teaspoon minced fresh ginger
1/2 teaspoon cayenne pepper
1 tablespoon white wine
1 tablespoon white vinegar
1 tablespoon ketchup
5 teaspoons white sugar
1/2 teaspoon salt
1/4 cup water
2 teaspoons cornstarch
2 teaspoons water
5 green onions , sliced

Instructions

1.Heat peanut oil in a large pan over medium-high heat until hot.
2.Coat shrimp with cornstarch.

5.Drain all but 2 tablespoons of oil from the pan.
6.Saute garlic, ginger, and cayenne pepper in the remaining oil until fragrant.
7.Add white wine, white vinegar, ketchup, sugar, salt, and water.
8.Bring the mixture to a boil and reduce heat to low.
9.Mix cornstarch and water in a small bowl and stir into the sauce.
10.Simmer until thickened, 1 to 2 minutes.
11.Return shrimp to the pan and toss with the sauce.
12.Garnish with sliced green onions.
