900 g potatoes ( peeled and thinly sliced )
1 onion ( thinly sliced )
2 garlic cloves ( sliced )
20 g flat leaf parsley ( chopped )
250 ml vegetable stock

Instructions

1.Preheat the oven to 200°C/fan 180°C/gas mark 6.
2.Spray a shallow 2-litre ovenproof dish with low-fat cooking spray and layer the potatoes and onions in the dish, sprinkling with garlic and parsley between each layer.
3.Pour over the vegetable stock so that it just covers the potatoes, then cover tightly with foil.
4.Bake in the oven for 45 minutes, then remove the foil and bake for a further 30 minutes until the potatoes are tender and golden.
