Ingredients

2 tablespoons flat leaf parsley
1 garlic clove
1 unwaxed lemon
2 tuna steaks , about 5 . 5oz each and about 1 . 4in thick
3 tablespoons extra virgin olive oil
salt and black pepper
3 ounces arugula leaves
5 cherry tomatoes , halved
1 tablespoon balsamic vinegar

Instructions

1.Finely chop the parsley and garlic and zest the lemon. Rub the tuna steaks with half the olive oil and season with salt and pepper.
2.Heat the remaining olive oil in a frying pan over a high heat. Add the tuna steaks and fry for 2-3 minutes on each side or until browned.
3.Remove the tuna from the pan and leave to rest for a couple of minutes. In a small bowl whisk together the balsamic vinegar, lemon zest and juice.
4.In a large bowl, mix together the arugula, halved cherry tomatoes, parsley and garlic. Dress with the balsamic lemon vinaigrette.
5.Finally, slice the tuna steaks and serve on top of the salad.
