4 sweet potatoes , cut in half lengthways
1 tablespoon olive oil
1 1/2 ounces butter
1 tablespoon caribbean jerk seasoning
1 lime , cut into wedges
5 tablespoons Greek yogurt
1 bunch fresh cilantro , chopped

Instructions

1.Preheat the oven to 200°C/400°F/gas 6

3.Use a sharp knife to make several slashes in the top of each potato half, taking care not to cut all the way through to the skin.

5.Divide the sweet potatoes between 4 plates, squeeze over a little lime juice and serve with a dollop of Greek yogurt and a sprinkling of chopped cilantro.
