4 -5 cups onions , the small pickling kind , peeled , and kept whole
2 large eggs
1/2 cup sugar
1 1/2 teaspoons mustard powder
1/2 teaspoon salt
1/4 teaspoon white pepper
wine vinegar or grape vinegar

Instructions

1.Boil the eggs in a pot of water for approximately 10 minutes.
2.In a separate pot, bring water, sugar, salt, mustard powder, and white pepper to a boil.
3.Add the onions to the pot and simmer for 10 minutes. Remove from heat and let cool.
4.Peel the eggs and chop them into small pieces.
5.Once the onions are cooled, place them and the chopped eggs in a bowl.
6.Add vinegar to the bowl and mix well.
7.Cover the bowl and refrigerate it for at least 2 hours before serving.
