Instructions

1.Preheat oven to 350°F/175°C
2.In a small saucepan, combine anise seed, dried mint, and 1 cup of water. Bring mixture to a boil and reduce heat to simmer for 5 minutes.
3.Strain the mixture into a bowl and discard the solids. Return the liquid to the saucepan with honey and lemon peel strips. Simmer the mixture for 5 minutes.
4.Place salmon fillets on an oven-safe dish, brush them with melted butter, and sprinkle salt and pepper to taste.
