Instructions

1.Boil the potato pieces in salted water until they are soft and easily pierced with a fork, then drain them and set aside.
2.While the potatoes are cooking, use a mortar and pestle to crush the garlic cloves with a generous pinch of salt until they form a smooth paste. Alternatively, you can use a food processor or blender instead.
3.Add the nuts (if using) to the garlic paste and continue crushing until everything is well combined.

5.With the motor running, slowly drizzle in the olive oil and blend until the mixture is emulsified and creamy.
