2 large onions , peeled and cut lengthwise into 6 wedges , leaving root ends intact
2 1/2 tablespoons olive oil
2 1/2 teaspoons balsamic vinegar

2 lbs skirt steaks , halved crosswise
2 1/2 teaspoons fresh coarse ground black pepper
2 avocados , peeled and sliced

18 flour tortillas

Instructions

1.Preheat your grill or broiler to high heat.

3.In another bowl, combine remaining 1 1/2 tablespoons of oil, lime juice, remaining 1 1/2 teaspoons of balsamic vinegar, remaining teaspoon of salt and black pepper. Add steaks, turning to coat.
4.Grill steaks until charred and cooked to desired doneness, about 3-5 minutes on each side. Let them rest for 5 minutes.
5.Grill or broil onions until charred and tender, about 3-5 minutes per side. Cut into bite size pieces.
6.Serve steak and onions with sliced avocado, tomato wedges, and warm tortillas. Garnish with cilantro leaves. Serve with your favorite salsa or lime wedges.
