Ingredients

1 tablespoon light butter ( like Brummel & Brown )
1/2 cup fat-free chicken broth
1/4 cup marsala wine
1 teaspoon cornstarch
1 1/2 cups sliced mushrooms
2 raw boneless skinless chicken breasts , pounded to 1/2-inch thickness
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon dried basil

Instructions

1.In a bowl, mix the chicken broth and marsala wine together. Sprinkle cornstarch and mix once again and set aside.
2.Place a large skillet on medium-high heat and add butter to it. Allow the butter to melt and add in sliced mushrooms. Cook them for 5-6 minutes until they release their juices and are tender.
3.Remove the mushrooms from the skillet and set aside. In the same skillet, add chicken breasts and cook them for 5-7 minutes until they turn golden brown.
4.Add salt, pepper, dried basil and stir in the mushroom juice and wine broth from step 1. Bring to boil, then let it cook for 3-4 minutes until the sauce thickens.
5.Add cooked mushroom back into the skillet and stir for another 1-2 minutes until the chicken in completely cooked through.
