6 potatoes
2 ounces butter , melted
coarse salt
6 -8 cloves garlic , finely minced
4 teaspoons Dijon mustard
2 egg yolks , slightly beaten
4 ounces vegetable oil
4 ounces olive oil
1 tablespoon lemon juice
salt and pepper or lemon pepper

Instructions

1.Preheat oven to 375°F
2.Prick potatoes all over with a fork and bake for 1 hour or until tender
3.Slice potatoes in half lengthwise and scoop out the pulp, leaving about 1/4-inch of potato flesh in the skins.
4.Cut potato halves into wedges and brush with melted butter and sprinkle with coarse salt. Place on a baking sheet and bake for another 10-15 minutes or until crispy
5.Whisk garlic, Dijon mustard, egg yolks, vegetable oil, olive oil, lemon juice, salt and pepper to make the sauce. Serve the potato wedges with the sauce on the side
