Ingredients

1 tablespoon olive oil
1 onion , minced
salt
1 lb sweet Italian turkey sausage or 1 lb hot Italian turkey sausage , casings removed
3 garlic cloves , minced
1/2 cup sun-dried tomato packed in oil , rinsed and chopped fine
8 ounces penne ( about 2 1/2 cups , can also use ziti )
2 cups low sodium chicken broth
1 cup milk
1 bag Baby Spinach
1 ounce parmesan cheese , grated or 1/2 cup parmesan cheese
pepper , to taste

Instructions

1.In a large skillet, heat olive oil over medium heat.
2.Add minced onion and a pinch of salt. Cook until onion becomes soft, about 3-5 minutes.
3.Add sausage meat and cook until well browned and cooked through, about 10 minutes. Break up clumps of meat as it cooks with a wooden spoon.
4.Add minced garlic and cook for another 1-2 minutes.
5.Add sun-dried tomatoes and cooked pasta to the skillet, mixing everything together well.
6.Pour chicken broth and milk into the pan and stir well.
7.Bring to a boil then reduce heat to a simmer, cooking until sauce is thickened and pasta is cooked through, about 10-12 minutes.
8.Add baby spinach and stir until it has wilted.
9.Stir in grated parmesan cheese and season with black pepper to taste.
