Ingredients

2 cups textured vegetable protein ( hydrate and season to taste before hand )
1/2 onion , chopped fine
1/2 red bell pepper , chopped fine
3 garlic cloves
1 cup elbow macaroni
0.5 can tomato sauce
1 cup broth
1/2 teaspoon dried oregano
salt and pepper
1/2 cup vegan cheddar cheese ( shred )

Instructions

1.Heat up a skillet over medium heat, add a teaspoon of cooking oil and sauté onions and red peppers for 3 - 5 minutes until they soften.
2.Add garlic to the skillet and cook for an additional minute. Then, add hydrated and seasoned TVP (textured vegetable protein) to the skillet and mix with the vegetables.
3.Cook elbow macaroni according to the package, but remove it from boiling water 1-2 minutes earlier than the instructed time. Drain and set aside.
4.To the skillet, add tomato sauce, broth, dried oregano, salt and pepper, and cook for 5 minutes until the mixture thickens.
5.Add cooked macaroni to the skillet and stir well. Turn off the heat, and sprinkle vegan cheddar cheese on top of the dish. Cover with a lid for 1-2 minutes or until cheese is melted.
