Ingredients

1 cup flour
2 cups whole wheat bread flour
1/4 cup mashed potato flakes
1/4 teaspoon nutmeg
1 tablespoon brown sugar

12 ounces evaporated 2 % milk
1 egg yolk
1 tablespoon plain yogurt
1 tablespoon vanilla
1 tablespoon canola oil
1 teaspoon salt
1/3 cup raisins , soaked in hot water for 10 minutes and drained
2 tablespoons brown sugar
1/2 tablespoon cinnamon
1 tablespoon tapioca starch
1 egg , beaten
3 tablespoons cinnamon baking chips

Instructions

1.In a mixing bowl, combine the flour, whole wheat bread flour, mashed potato flakes, nutmeg, 1 tablespoon of brown sugar, and instant yeast.
2.In a separate bowl, whisk together the evaporated 2% milk, egg yolk, plain yogurt, vanilla, canola oil, and salt.
3.Add the liquid ingredients to the dry ingredients, mixing until the dough comes together.
4.Knead the dough for 8-10 minutes until it becomes smooth and elastic.
5.Cover the dough and let it rest for 1 hour, until it has doubled in size.
6.Preheat the oven to 350°F (175°C).
7.Mix together the soaked raisins, 2 tablespoons of brown sugar, cinnamon, and tapioca starch.
8.Roll out the dough into a rectangle shape, spreading the raisin mixture evenly over the surface.
9.Roll up the dough tightly, starting from the short edge, and place it into a greased loaf pan.
10.Brush the top of the bread with the beaten egg and sprinkle cinnamon baking chips over the top.
11.Bake the bread for 35 - 40 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
12.Allow it to cool for 10 - 15 minutes before slicing and serving.
