Ingredients

1 1/2 - 2 lbs pork shoulder
2 cups soy sauce ( or enough to cover the meat )
3 tablespoons hoisin sauce
3 jalapeno peppers
2 limes
5 garlic cloves
1 teaspoon powdered ginger
3/4 onion
3 tablespoons honey ( adjust to taste )
1 teaspoon liquid smoke ( optional )
1/2 cup cilantro ( garnish )
1 hard-boiled egg ( garnish )
Sisig is a popular Filipino dish made with pig head and liver, traditionally seasoned with calamansi juice, soy sauce, and chili peppers. This recipe is a simplified version of sisig, using pork shoulder instead of the traditionally used parts and inspired by the flavors of the dish. The pork shoulder is marinated in soy sauce, hoisin sauce, jalapeno peppers, and other seasonings before being cooked in the oven or pressure cooker. Instructions

1.Preheat the oven to 375°F or set the pressure cooker to High pressure.
2.In a large bowl, mix together the pork shoulder and enough soy sauce to cover the meat.
3.Add in the hoisin sauce, finely chopped jalapeno peppers, juice of 2 limes, minced garlic, powdered ginger, and diced onion. Mix well.
4.If using an oven, transfer the mixture to a baking dish and roast for 2-3 hours, or until the meat is fall-apart tender.
5.If using a pressure cooker, cook the mixture on High pressure for 60-70 minutes.
6.Once done, remove the meat from the cooking vessel and shred using 2 forks.
7.In a clean bowl, mix together the shredded pork, honey, and liquid smoke (optional) until well combined.
8.Serve the sisig-inspired pork shoulder hot, topped with fresh cilantro and a sliced hard-boiled egg.
