Sinseollo is a dish that originated from the Korean Royal Courts during the Joseon Dynasty. It was a favorite dish of the royal family and was often served at banquets and special occasions. The dish is prepared in a special earthenware pot, called a sinseollo, which is shaped like a large central bowl with smaller compartments around it. The pot is placed over a heat source, and the ingredients are cooked in layers. Sinseollo is a dish that is still enjoyed today in Korea and is often served at traditional Korean restaurants.

Instructions

1.Blanch the beef, cod, and pyogo mushrooms in boiling water for 5 minutes. Then rinse with cold water and cut into bite-size pieces.
2.Divide the carrot, onion, and fresh parsley evenly and place them in the middle of the earthenware pot.
3.Arrange the beef, cod, pyogo mushrooms, ginkgo nuts, and leeks around the edge of the pot.
4.Add the beef stock and bring to a boil over medium heat, then reduce the heat to low and simmer for 20 minutes.
5.Remove the scum that forms on top of the pot with a ladle.
6.Mix the finely chopped beef, flour, egg, salt, and pepper. Shape the mixture into bite-size dumplings and add to the pot.
7.Beat the two eggs, flour, salt, and pepper until blended and pour into the pot.
8.Continue cooking for 15 minutes until the vegetables are tender and the dumplings are cooked through.
9.Serve hot in the earthenware pot.
