Ingredients

2 -3 lbs ground beef ( add more or less depending on the size of baking pan you choose to use )
3 cans cream of chicken soup
1 jar jalapenos
4 tomatoes , diced ( more if you would prefer more )
32 ounces shredded cheese ( I prefer krafts 4 cheese mexican blend )
1 package of pre-shredded lettuce
1 package of burrito size tortillas
1 -2 teaspoon salt ( optional )
1 -2 teaspoon pepper ( optional )
Sinny's Spicy Enchilada Casserole is a classic Tex-Mex dish that is hearty and satisfying. Loaded with ground beef, cheese, and tomatoes, it is sure to fill you up and leave you satisfied. Instructions

1.Preheat oven to 375 degrees F (190 degrees C).
2.Brown the ground beef in a skillet over medium heat until fully cooked.
3.Add the cream of chicken soup and jalapenos to the skillet with beef, stir together until fully combined.
4.In a separate bowl, mix together the diced tomatoes and shredded cheese.
5.Grease the baking pan with cooking spray. Lay tortillas on the bottom of the pan to cover as fully as possible, overlapping slightly as you go.
6.Spoon a layer of the beef mixture onto the tortillas, followed by a handful of the tomato and cheese mixture.
7.Repeat step 6 until you have used up all of your ingredients (usually about 2-3 layers depending on the depth of your pan).
8.Cover the dish with foil and bake in the preheated oven for 30 minutes.
9.Remove foil and continue to bake for an additional 15-20 minutes, or until the cheese is fully melted and bubbly on top.
