8 ounces plain flour
1 pinch salt
1 teaspoon baking powder
2 ounces butter
2 ounces lard
1 ounce sugar
3 ounces sultanas ( golden raisins )
2 -3 tablespoons milk
Singin' Hinnies are a traditional English scone-like griddle cake, made with flour, butter, lard, sugar, and sultanas. They are cooked on a griddle or skillet until golden brown, and served hot with butter and jam. The name 'singin' hinnies' comes from the sound they make while cooking on the griddle. They are similar in texture to a scone or a biscuit, but are cooked on the stovetop instead of baked in the oven.

Instructions

1.Mix the flour, salt and baking powder in a bowl.
2.Rub the butter and lard into the flour mixture.
3.Stir in the sugar and sultanas.
4.Add the milk gradually until you have a soft dough.
5.Dust a surface with flour and roll out the dough to ½-inch thickness.
6.Cut into rounds with a cookie cutter.
7.Heat a griddle or a heavy skillet over medium heat.
8.Cook the hinnies for 2-3 minutes on each side or until golden brown.
9.Serve hot with butter and jam.
