Ingredients

200 g salted butter , softened
1/2 teaspoon vanilla flavoring
70 g brown sugar
200 g butter , softened
160 g icing sugar , sifted

1 teaspoon coffee flavoring ( available from bakery supplies shop , You can use 2 tablespoons instant coffee powder dissolved in 1 )
1 pinch ground cinnamon , can be added to the coffee flavouring for extra flavour
200 g all-purpose flour , sifted
500 g bread flour , sifted
20 g powdered milk , sifted
75 g caster sugar
6 g salt
8 g instant yeast
1 egg , lightly beaten
270 g water ( do not use milk powder if using milk ) or 270 g milk ( do not use milk powder if using milk )
60 g butter , softened

Instructions

1.In a large bowl, cream the salted butter, brown sugar and vanilla flavoring using an electric mixer on medium speed until smooth and fluffy.
2.Gradually add the sifted icing sugar and beat again until well combined.
3.Add the lightly beaten eggs and coffee flavoring (dissolve 2 tablespoons of instant coffee powder in 1 tablespoon water if coffee flavoring is not available) to the mixture and beat until well combined.
4.Sift the all-purpose flour, bread flour and powdered milk into the mixture.
5.Add the caster sugar, salt and instant yeast and mix everything together to form a dough.
6.Knead the dough by hand for 10-15 minutes until smooth and elastic.
7.Divide the dough into equal-sized pieces and roll each piece into a long and thin shape.
8.Brush the rolled dough with the lightly beaten egg and let it rest for 10 minutes.
9.Preheat the oven to 180°C and bake the buns for 20-25 minutes or until golden brown.
