1 1/2 cups bread flour , plus an additional 1/2 cup to cup for kneading and rolling

1 teaspoon salt
1 egg yolk
1 egg white , for sealing the pierogie
1/3 cup crumbled goat cheese
4 green onions , chopped
1/2 cup spinach , chopped
1/2 cup sun-dried tomato , chopped
1/3 cup low-fat sour cream ( pierogie chef 's choice ! ) or 1/3 cup cottage cheese ( pierogie chef 's choice ! )
1/2 teaspoon garlic salt
1/2 teaspoon kosher salt
1/2 teaspoon pepper
4 cups salt water
2 tablespoons butter
1/4 cup onion
Simply Potatoes Goat Cheese Pierogies are a fresh and flavorful take on a classic Polish dish. Instructions

1.In a large bowl, mix the flour, mashed potatoes, salt, and egg yolk together until combined.
2.Knead the dough on a floured surface for 5-8 minutes until smooth and elastic.
3.In a separate bowl, mix together the goat cheese, green onions, spinach, sun-dried tomato, sour cream or cottage cheese, garlic salt, kosher salt, and pepper.
4.Roll out the dough to 1/8 inch thickness and cut into rounds using a biscuit cutter.
5.Place 1 tablespoon of the goat cheese mixture in the center of each round, fold in half, and seal with egg white.
6.Bring salt water to a boil and add the pierogies carefully. Cook for 4-5 minutes until they rise to the surface.
7.In a separate sauté pan, melt the butter and sauté the onion until golden brown.
8.Serve the pierogies hot with sautéed onions on top!
