Ingredients

100 g broccoli , cut into florets
150 g udon noodles
1 egg
2 tablespoons water
salt
2 tablespoons oil , divided ( olive or canola or peanut etc )
1 small yellow onion , chopped
1 stalk spring onion , chopped ( reserve the green part )
2 garlic cloves , minced
3 slices ham , chopped
2 tablespoons hoisin sauce
1 tablespoon oyster sauce
1 tablespoon soy sauce
1/2 tablespoon dark soy sauce ( the thick and sweet kind )
1/2 teaspoon white pepper
2 tablespoons mirin or 2 tablespoons rice wine
crushed chili pepper flakes , to taste
1/2 teaspoon sesame oil
1 lime , juice of
Stir-fried udon noodles is a popular dish in Japan and many other Asian countries. It is often served as a quick meal in restaurants and homes, as it does not require too much preparation time while still being delicious and satisfying. Udon noodles are thick and chewy, and go well with a variety of ingredients and sauces. Instructions

1.Blanch broccoli in boiling water for 2-3 minutes until “al dente”. Drain and set aside.
2.Heat up 1 tablespoon oil in a wok over high heat. Whisk eggs with water and a pinch of salt. Pour the egg mixture into the wok. Gently scramble and break into pieces. Turn off heat when set.
3.Remove the egg pieces and set aside.
4.Heat up another tablespoon oil in the same wok. Add onion, garlic, white part of spring onion and ham. Stir-fry for 1-2 minutes until onion becomes translucent.
5.Add udon noodles to the wok. Quickly toss until well combined with other ingredients.
6.Add blanched broccoli and stir-fry for another 1-2 minutes.
7.Add hoisin sauce, oyster sauce, soy sauce, dark soy sauce, white pepper, mirin or rice wine, chili pepper flakes, sesame oil and lime juice. Toss the noodles to coat everything well.
8.Finally, add scrambled egg and reserved green part of spring onion. Give it one last toss and your stir-fried udon is ready to serve!
