10 plump red onions
500 g golden unrefined unbleached cane sugar
750 ml approx red wine vinegar ( or one and a half normal-sized bottles of the stuff )

Instructions

1.Start by peeling and slicing the red onions into thin rounds.
2.In a pan, heat the golden unrefined cane sugar until it melts and caramelizes.
3.Add the red onions to the pan and stir to coat them evenly with the caramel.
4.Pour the red wine vinegar into the pan and continue stirring until everything is mixed and combined.
5.Lower the heat, cover the pan and let it simmer for 2-3 hours, stirring occasionally to prevent burning.
