1/4 cup milk
400 g pork mince
400 g beef mince
1 small onion , finely chopped
1 tablespoon ground cumin
2 eggs , lightly beaten
1/2 cup pimento-stuffed green olives , chopped
1/2 cup flat leaf parsley , chopped
1 cup salsa ( your choice , mild , medium or hot )
This Simple Mexican Meatloaf is a twist on the traditional meatloaf with a hint of Mexican spices. It is a perfect dish to spice up your weekday dinners with a flavor-packed punch! Instructions

1.Preheat oven to 180°C. Grease a 10 x 20cm loaf pan.
2.Place bread in a large bowl and pour over milk. Leave for 5 minutes to soak.
3.Add the pork mince, beef mince, onion, cumin, egg, olives and parsley. Season with salt and pepper. Use your hands to mix until well combined.
4.Press the mixture into the prepared pan. Spread salsa over the surface.
5.Bake in preheated oven for 1 hour or until cooked through.
