Ingredients

1 lb ground beef
1 can black beans , rinsed and drained
1 cup rice , prepared
1 jalapeno , small dice
2 corn on the cob , shucked and corn cut off the cob ( feel free to use canned corn , if necessary )
1 can enchilada sauce
1 tablespoon adobo seasoning
1/4 tablespoon red pepper flakes
1/2 tablespoon dried cilantro
1/2 lime
4 -6 tortillas , cut into strips
2 cups Mexican blend cheese
sour cream , guacamole , black olives , salsa
This Simple Mexican Casser-Olé is perfect for those nights when you need a hearty and flavorful dinner that doesn’t take all your energy to make. The casserole is filled with ground beef, black beans, rice, and veggies like jalapeño and corn. Instructions

1.Preheat oven to 375°F.
2.In a large skillet, cook ground beef over medium heat until browned. Drain any excess fat.
3.Stir in black beans, prepared rice, jalapeño, corn, enchilada sauce, adobo seasoning, red pepper flakes, and dried cilantro. Squeeze lime over top and stir again.
4.Layer half of the tortilla strips onto the bottom of a 9x13 inch baking dish. Spoon half of the beef mixture on top, and sprinkle with 1 cup of the Mexican blend cheese. Repeat with remaining tortilla strips, beef mixture, and cheese.
5.Bake in preheated oven for 25-30 minutes, until cheese is melted and casserole is heated through. Serve with sour cream, guacamole, black olives, and salsa on top if desired.
