Ingredients

1 box chicken flavor stuffing mix
1 1/4 cups hot water ( hot tap water is ok )
2 tablespoons butter or 2 tablespoons margarine
1 can water chestnuts , drained and rough chopped
1 small onion , chopped
1 -2 tablespoon poultry seasoning , to taste
1 chicken ( fresh or frozen , thawed ) or ( 5 lb ) turkey ( fresh or frozen , thawed )
salt & fresh ground pepper , to taste
1/4 cup butter , softened
aluminum foil
chicken giblets
water , to cover
salt and pepper , to taste
1 teaspoon poultry seasoning
3 -4 tablespoons flour or 3 -4 tablespoons cornstarch
hot water , to thin if necessary

Instructions

1.Preheat oven to 350 degrees F (175 degrees C).
2.In a large bowl, combine stuffing mix, hot water, and melted butter.
3.Add chopped water chestnuts, onion, and poultry seasoning to the stuffing mix. Mix well.
4.Clean chicken and remove giblets. Pat chicken dry with paper towels.
5.Season the chicken with salt, pepper and poultry seasoning. Place the chicken on a large sheet of aluminum foil.
6.Stuff the chicken cavity with the stuffing mix. Rub the outside of the chicken with softened butter.
7.Close the aluminum foil around the chicken tightly leaving a gap for steam to escape.
8.Place the chicken in the preheated oven and bake until the chicken reaches an internal temperature of 165 degrees F (75 degrees C).
9.Remove the aluminum foil and broil the chicken for a few more minutes until golden.
10.While the chicken is cooking, make the gravy by boiling the giblets in a pot of water with salt, pepper, and poultry seasoning until cooked through, about 30 minutes. Remove the giblets and reserve the broth.
11.In a small bowl, mix together flour or cornstarch with a little warm water until smooth.
12.Pour the broth into a saucepan and bring to a boil. Add the flour or cornstarch mixture, stirring constantly until thickened. Thin with more hot water if necessary. Serve the gravy over the stuffed roast chicken.
