It is often made at home and can be adjusted to individual tastes and preferences. Sima is similar to mead or a honeyed beer in taste and texture, but it is much easier and faster to make. It has also gained some popularity in other Nordic countries and is a perfect drink for picnics, barbecues, or any other occasion when you want to celebrate the arrival of spring in a fun way.

Instructions

.Cut the lemons into slices and place them in a large pot.
.Add water, brown sugar, and white sugar to the pot and stir well.
.Add yeast to the mixture and give it a gentle stir.
.Cover the pot with a lid or a clean cloth and leave it at room temperature for 24 hours.
.Skim off any foam that has formed on the surface and then add the raisins.
.Cover the pot again and let it ferment for another 24-36 hours.
.Use a cheesecloth or a fine-mesh strainer to strain the liquid into clean bottles.
.Add a teaspoon of sugar to each bottle and close them tightly with caps or corks.
.Place the bottles in a cool place for 1-2 days to carbonate. Then refrigerate and serve chilled.
