Ingredients

2 sheets shortcrust pastry , partially thawed
1/4 cup pine nuts
1 250 g spinach ( see Notes ) or 250 g baby spinach leaves , washed , thoroughly dried and shredded ( see Notes )
200 g rindless bacon , chopped
1 leek , halved lengthways , thinly sliced
4 garlic cloves , chopped
2/3 cup tasty cheese , grated
3 eggs
1/2 cup thickened cream
2/3 cup milk
salt , to taste ( if including the bacon is you may want to omit salt )
fresh ground pepper , to taste
Quiche is a classic French dish that originated in the Lorraine region of France. It is a savory dish that can be made with a variety of fillings, including vegetables, meats, and cheeses. The Silverbeet (Swiss Chard) - or Spinach - Leek & Garlic Quiche is a vegetarian version of the classic dish that is full of flavor and nutrition. Instructions

1.Preheat the oven to 200C/390F .
2.Place the partially thawed pastry into a 23cm fluted flan tin and trim any excess pastry.
3.Blind bake the crust for 10 minutes in the preheated oven, then remove from oven and cool while you prepare the filling.
4.Toast the pine nuts in the oven for 5 minutes, then sprinkle over the bottom of the pastry shell and scatter the shredded spinach over the nuts.
5.Cook the bacon in a large skillet until it is crispy, then remove from pan and set aside.
6.In the bacon pan, add the sliced leek and garlic, cooking over medium heat until soft.
7.Layer the bacon over the spinach and pine nuts, followed by the leek and garlic.
8.Sprinkle the grated cheese over the layered ingredients.
9.In a large jug, whisk together eggs, cream, milk, salt, and pepper until well mixed, then pour slowly over the layered ingredients.
10.Bake in the preheated oven for 35-40 minutes, or until golden and set in the middle. Remove from the oven and let cool for at least 10 minutes before slicing and serving.
