Ingredients

4 cups water
2 cups white rice
6 potatoes , peeled
1/2 cup vegetable oil , divided
3 cups bread crumbs
1 1/2 pounds beef top sirloin , thinly sliced
salt to taste
6 eggs
3 onions , diced
2 tomatoes , diced
2 red chile peppers ( locoto ) , chopped
3 tablespoons olive oil , or to taste
Silpancho is a famous dish that originated in Cochabamba, Bolivia. This hearty meal is typically served for lunch and dinner and is also a staple food during festivals and celebrations. The dish comprises meat, potatoes, and rice, with a layer of crispy bread crumbs on top. It's usually accompanied by a spicy sauce and a side of fresh vegetables, such as tomatoes and lettuce. Silpancho is a flavorful and satisfying meal that's loved by locals and visitors alike.

Instructions

1.Boil the water and add rice to it. Cook rice until tender and soft, then set it aside.
2.Meanwhile, boil the potatoes in salted water for 20 minutes. Drain and mash them, then season them with salt.
3.In a frying pan, heat 1/4 cup of vegetable oil over medium-high heat. Coat the beef slices in bread crumbs, then fry for 2-3 minutes per side until golden brown. Drain on a paper towel and season with salt.
4.Fry the eggs in the same pan, one by one, until the whites are set but the yolks are still runny.
5.In a separate pan, sauté onions, tomatoes, and chile peppers in olive oil until the onions are translucent.
6.To serve, place a layer of rice on a plate, topped with a layer of mashed potatoes, then a slice of beef. Add the sautéed onions, tomatoes, and chile peppers on top, and finish with a fried egg. Serve hot.
