Ingredients

3 lbs ripe tomatoes
1 sweet onion , such as Vidalia , cut into 1-inch pieces ( about 4 oz )
2 large garlic cloves
1/4 jalapeno pepper , seeded & cut into 1/2-inch pieces ( or less depending on your tolerance )
3/4 teaspoon salt
2 tablespoons olive oil
1/4 teaspoon Tabasco sauce ( or less if desired )
3 cups loosely packed spinach leaves
1/4 cup oil ( a mixture of canola & olive oil )
1/4 teaspoon salt
1/4 cup water
Silky Summer Tomato Soup With Spinach Coulis is a fresh and flavorful summer soup. Ripe tomatoes are roasted in the oven with onions and garlic until they’re soft and caramelized. The mixture is then pureed in a blender or food processor until it’s silky smooth. The soup is garnished with a homemade spinach coulis, made by blending spinach, oil, salt, and water together, that adds both a bright green hue and a slightly tangy flavor. This dish would make an excellent first course for a summer dinner party or a light lunch to enjoy in the sun.

Instructions

1.Preheat oven to 375°F.
2.Remove the stem end of the tomatoes and cut each one in half crosswise.
3.Place the tomatoes, cut side up, in a single layer on a baking sheet along with the onions and garlic.
4.Add the jalapeño to the baking sheet as well, if using.
5.Season everything with 3/4 teaspoon of salt and drizzle with olive oil.
6.Roast for 30 minutes or until the vegetables are soft and lightly caramelized.
7.Allow the vegetables to cool slightly.
8.Transfer the roasted vegetables and any juices that may have accumulated on the baking sheet to a blender or food processor.
9.Add the Tabasco sauce to the blender or food processor and puree until smooth.
10.Season to taste with additional salt and Tabasco, if necessary.
11.To make the spinach coulis, blend the spinach, oil, salt, and water in a blender until smooth.
12.To serve, ladle the hot tomato soup into bowls and spoon the spinach coulis on top.
