Ingredients

1 garlic clove , halved
4 tablespoons olive oil , divided plus olive oil for brushing pan
2 cups onions , chopped

2 1/4 lbs russet potatoes , peeled and very thinly sliced ( a mandoline works great here ! )
8 tablespoons packed grated pecorino romano cheese , divided
3 tablespoons capers , drained
2 cups low sodium chicken broth

Instructions

1.Preheat oven to 375°F.
2.Rub the inside of a 9x13 inch baking dish with the halved garlic clove and brush with olive oil.

7.Top with the remaining sliced potatoes and sprinkle with 2 tablespoons cheese.
8.Mix chicken broth and remaining 2 tablespoons olive oil in a large measuring cup and pour the mixture over the potatoes.
9.Sprinkle with the remaining 4 tablespoons cheese.
10.Bake for approximately 1 hour, or until the potatoes are tender and the gratin is golden brown and bubbling.
11.Let the gratin cool for 10 minutes before serving.
