Ingredients

1 teaspoon salt

2 cups fresh green beans , trimmed and cut into 1-inch lengths
1 medium summer squash , halved lengthwise and sliced 1/4 inch thick
1 jar marinated artichoke hearts , with liquid
1/4 cup sun-dried tomato packed in oil , drained and thinly sliced
1 -2 tablespoon red wine vinegar , to taste
1 tablespoon chopped fresh oregano or 1 teaspoon dried oregano
6 ounces part-skim mozzarella cheese , preferably fresh , diced
salt and black pepper

Instructions

1.Bring a large pot of salted water to a boil. Add the pasta and cook until al dente.
2.In the last 2 minutes of cooking, add the green beans and squash to the pot.
3.Drain the pasta and vegetables, reserving 1/2 cup of the cooking water.
4.In a large bowl, whisk together the artichoke marinade, red wine vinegar, and oregano.
5.Add the pasta and vegetables to the bowl, along with the sun-dried tomatoes and mozzarella cheese. Toss to combine, adding reserved cooking water as needed to loosen the dressing.
6.Season to taste with salt and black pepper.
7.Chill in the refrigerator for at least 30 minutes before serving.
