Ingredients

1/2 cup fresh breadcrumb ( from crustless French bread ground in processor )
1/4 cup water
1 1/4 lbs ground lamb
1/2 cup finely grated pecorino cheese
1 large egg , beaten to blend
1 tablespoon chopped of fresh mint
1 tablespoon chopped fresh marjoram
1 teaspoon coarse kosher salt
1/2 teaspoon fresh ground black pepper
1/8 teaspoon ground cinnamon
1 large eggplant , unpeeled , cut into 1-inch cubes
6 tablespoons extra virgin olive oil , divided
coarse kosher salt
1 large red bell pepper , halved , seeded , cut into 1/2-inch wide strips
1 cup finely chopped onion
1 1/3 cups dry white wine
3 large garlic cloves , minced
2 cups heirloom tomatoes , chopped , seeded , peeled
2 teaspoons fresh marjoram , chopped
penne , cooked per package instructions ( or ziti or rigatoni )
Sicilian Lamb Patties Braised W- Eggplant, Peppers and Tomatoes is a modern take on a classic Sicilian dish. This hearty and flavorful main course pairs tender lamb patties with fresh vegetables and spices. The dish has a rich, savory flavor that is sure to please any meat lover. It can be served with a side of penne, ziti, or rigatoni to create a filling and satisfying meal.

Instructions

1.In a medium bowl, stir together the fresh breadcrumbs and water and let stand for 5 minutes.
2.In another mixing bowl, add the ground lamb, finely grated pecorino cheese, 1 beaten egg, chopped fresh mint, chopped fresh marjoram, coarse kosher salt, fresh ground black pepper, and ground cinnamon. Mix well.
3.Add the breadcrumb mixture to the lamb mixture and stir until just combined, being careful not to overmix.
4.Form the lamb mixture into 8 large patties.
5.Preheat oven to 350 F.
6.In a large skillet heat 3 tablespoons of extra virgin olive oil over medium high heat. Add lamb patties and cook until browned on both sides, about 2 minutes per side. Remove the lamb patties from the skillet and transfer to a plate.
7.Add 3 more tablespoons of olive oil to the skillet and once hot, add eggplant cubes and peppers. Cook until the vegetables are browned, stirring occasionally.
8.Add onions and cook until softened, about 5 minutes.
9.Add white wine and garlic and bring to a boil, scraping up any browned bits from the bottom of the skillet.
10.Add tomatoes and marjoram and return to a boil.
11.Transfer the lamb patties to a baking pan and pour the vegetable mixture over them. Bake in the preheated oven for 15-20 minutes until the lamb is cooked through.
12.Serve hot with cooked penne or your preferred pasta.
