3 lbs whole chickens
1/4 cup shaoxing wine
1 tablespoon ginger , minced
3 green onions , chopped
4 lbs kosher salt
1 teaspoon five-spice powder
2 teaspoons szechuan peppercorns
1 large piece cheesecloth
1 tablespoon hot water
1 tablespoon Chinese chili sauce
1 teaspoon unseasoned rice vinegar
1/2 teaspoon sugar
2 tablespoons unseasoned rice vinegar
2 tablespoons garlic , minced
1 tablespoon sugar
1 tablespoon fresh ginger , minced
2 tablespoons peanut oil
1/4 teaspoon kosher salt

Instructions

1.Preheat the oven to 400°F.

4.Stuff the chicken with minced ginger and green onions. Place the chicken on top of the salt mixture in the baking dish.
5.Cover the chicken completely with the remaining salt mixture.
6.Bake the chicken in the oven for 1 hour.
7.Mix together hot water, Chinese chili sauce, unseasoned rice vinegar, and sugar in a small bowl.
8.In a skillet, add peanut oil, garlic, fresh ginger, and 1/4 teaspoon of kosher salt. Cook for a few minutes until fragrant and set aside.
9.Once the chicken is cooked, remove it from the oven and let it rest for 5 minutes.
10.Crack the salt crust and peel it off carefully. Remove the chicken from the bones and shred.
11.Mix the shredded chicken with the garlic-ginger mixture and 2 tablespoons of unseasoned rice vinegar.
12.Drizzle the hot sauce over the shredded chicken and serve with steamed rice and vegetables.
