1 1/2 teaspoons ground black pepper
1 teaspoon turmeric powder
1/2 teaspoon ground red chile pepper
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1 1/4 pounds basmati rice
1 1/2 cups unsalted butter
6 onions , thinly sliced
4 ripe tomatoes , cut into 1/4-inch cubes
4 potatoes , peeled and quartered
1 1/2 cups cold water , or more as needed
12 cups water
3 tablespoons salt
1 tablespoon butter
4 bay leaves , or more to taste

Instructions

1.In a large bowl, mix together goat meat, Greek yogurt, prunes, ginger, garlic paste, salt, cumin, black pepper, turmeric powder, red chile pepper, cinnamon, and cloves until the meat is coated well with the mixture.
2.Soak basmati rice in cold water for 30 minutes and drain.
3.Melt unsalted butter in a large pot over medium heat, add sliced onions and cook until golden brown. Remove half of the cooked onions and set aside.
4.Add goat meat mixture to the pot and cook for 10-15 minutes on medium heat until the meat is browned.
5.Add tomatoes, potatoes, cold water, salt, and bay leaves to the pot, and bring to a boil.
6.Reduce the heat to low, cover the pot and let it simmer for about 45 minutes until the goat meat is cooked through and tender.
7.In a separate large pot, bring 12 cups of water to a boil and add the drained rice. Cook for about 5-7 minutes until almost cooked and drain.
8.Spread half of the cooked rice over the goat meat mixture in the pot. Then sprinkle half of the reserved fried onions on top of the rice. Repeat with another layer of rice and onions on top of the first layer.
9.Cover the pot with a tight-fitting lid and let it cook on low heat for about 25 minutes until the rice is fully cooked.
10.Fluff the cooked rice with a fork to mix in the onions and serve hot.
