1 egg white , beaten
1/2 teaspoon cornstarch
1/4 teaspoon ground white pepper
3 thin slices fresh ginger root
1 fillet swai fish , cut into bite-sized pieces
1 tablespoon vegetable oil
10 Sichuan peppercorns
5 dried chile de arbol peppers
1 tablespoon vegetable oil
2 teaspoons Sichuan bean sauce
2 cups water
3 stalks celery , cut into 1/2-inch pieces
1 cup sliced napa cabbage
2 teaspoons minced garlic
2 sprigs cilantro

Instructions

1.In a small bowl, mix together the beaten egg white, cornstarch, and ground white pepper. Add the fish pieces and mix well.

3.Add the fish mixture and stir until it turns white. Remove the fish and ginger from the wok and set aside.

5.Add the water, celery, and napa cabbage to the wok and bring to a boil. Simmer for 5 minutes.
6.Return the fish and ginger to the wok. Add the minced garlic and cilantro. Simmer for another 3 minutes.
