Ingredients

1 lb jumbo shrimp , peeled , devained and tails removed ( jumbo is key for this dish , approximately 12-16 shrimp , depending on the size )
2 -3 links spanish chorizo ( not Mexican , which is the soft chorizo , Spanish is the hard cured chorizo , you will get 5-6 slices p )
16 -24 pearl onions
1 jar Spanish olives ( you could also use black olives if you prefer )
fresh mozzarella ball ( optional )
1/4 cup Italian salad dressing ( I just use bottled , but you can always use a homemade dressing if you want )
salt
pepper

Instructions

1.Preheat grill or grill pan to high heat.
2.Slice the chorizo links into 1/2 inch thick rounds.
3.Skewer shrimp, pearl onions, and chorizo rounds, alternating between each ingredient.
4.Brush with Italian salad dressing and season with salt and pepper.
5.Grill skewers for 5-6 minutes per side, until shrimp are pink and cooked through.
6.Serve with Spanish olives and fresh mozzarella if desired.
