Ingredients

1 lb shrimp ( peeled and deveined )
1 lb scallops ( cleaned )
1 1/2 teaspoons crushed red pepper flakes ( divided )
4 tablespoons olive oil ( divided )
2 teaspoons table salt ( divided )
1/2 cup cognac or 1/2 cup brandy
6 tablespoons minced garlic , divided ( about 12 medium or 8 large cloves )
3/4 teaspoon granulated sugar
2 cans diced tomatoes ( drained )
1 1/2 cups medium-dry white wine ( such as Sauvignon Blanc or Pinot Grigio )
1/4 cup plus 2 tablespoons minced fresh parsley leaves
2 tablespoons butter
1 lb linguine or 1 lb spaghetti

Instructions

1.In a large pot, bring salted water to boil and cook the linguine or spaghetti according to instructions on the package. Drain and set aside.
2.Heat 2 tbsp of olive oil in a large skillet over medium heat. Add shrimp and scallops, sprinkle with 1 tsp salt and 1/2 tsp red pepper flakes. Cook for about 3-4 minutes until opaque. Remove from the skillet and set aside.
3.In the same skillet, heat the remaining 2 tbsp olive oil over medium heat and add 4 tbsp garlic and 1 tsp red pepper flakes. Cook for about 30 seconds, then add the cognac or brandy. Cook for about 1 minute, stirring constantly.
4.Add the sugar, drained tomatoes and 1 tsp salt to the skillet. Cook for about 5 minutes, then add the wine. Cook for about 10 more minutes until the sauce is slightly thickened.
5.Return the shrimp and scallops to the skillet, add the parsley and butter. Toss everything together, making sure to coat all the seafood.
6.Serve the seafood over linguine or spaghetti, garnished with additional parsley if desired.
