3/4 cup riesling wine or 3/4 cup other white wine
2 1/2 cups clam juice
crushed red pepper flakes , to taste
2 tablespoons chopped fresh basil , divided
2 teaspoons chopped fresh tarragon
freshly grated parmesan cheese

Instructions

1.Melt 2 tablespoons of butter in a large skillet over medium heat. Add the shrimp and cook until just pink and cooked through - about 2-3 minutes per side. Remove shrimp to a plate and set aside.
2.In the same skillet melt 2 tablespoons more of butter. Add the chopped shallots and sauté until soft and translucent - about 3 minutes.
3.Add the rice and stir to coat with butter. Cook for about 2 minutes or until the rice is lightly toasted.
4.Pour in the white wine and stir until evaporated.
5.Add the clam juice, crushed red pepper flakes, and half of the fresh basil. Simmer for 20-25 minutes, stirring occasionally, until the risotto is cooked. If the rice looks too dry, add a bit more clam juice or water.
6.Once the rice is cooked, remove it from heat. Stir in the remaining butter, fresh tarragon, and freshly grated parmesan cheese until melted and well incorporated. Then add the cooked shrimp and remaining fresh basil.
7.Serve the shrimp risotto topped with extra grated parmesan cheese and fresh herb butter to taste.
