Ingredients

2 tablespoons vegetable oil
1 onion , sliced
1 red bell pepper , sliced
1 green bell pepper , sliced
1 teaspoon salt
1 teaspoon ground cumin
1 teaspoon chili powder
1 pound uncooked medium shrimp , peeled and deveined
1 jalapeno pepper , seeded and minced
1 lime , juiced
1 teaspoon vegetable oil , or as needed
6 large flour tortillas
3 cups shredded Mexican cheese blend , divided

Instructions

1.In a large skillet over medium heat, warm 2 tablespoons of vegetable oil. Add sliced onion, red bell pepper, green bell pepper, salt, cumin, chili powder and sauté for around 10 to 15 minutes until well-cooked.
2.Add the shrimp, jalapeno pepper, and the lime juice. Cook for around 5 minutes until the shrimp is opaque. Remove the cooked shrimp and vegetables from the skillet.
3.Using the same skillet, add a teaspoon of vegetable oil and heat over medium heat.
4.Lay a flour tortilla in the skillet. Sprinkle a portion of shredded Mexican cheese blend over the tortilla and add a portion of the cooked shrimp and vegetable mixture. Fold the tortilla in half and cook until the bottom is golden brown.
5.Flip the tortilla and cook the other side until it is golden brown and slightly crispy. Repeat with the remaining tortillas, cheese, and filling.
