Ingredients

2 tablespoons olive oil , divided
2 cups Arborio rice
4 cups boiling vegetable broth
2 teaspoons minced garlic
1 medium leek , chopped
1 fresh red chile pepper , chopped
1 pound medium shrimp , peeled and deveined
1/2 pound small scallops
1 bag fresh spinach leaves
1/2 red bell pepper , finely chopped
1 teaspoon fresh ground pepper
This Shrimp, Leek and Spinach Risotto is a heart-healthy and delicious meal. Instructions

1.In a large skillet over medium heat, add 1 tablespoon of olive oil and cook Arborio rice for 2-3 minutes stirring constantly.
2.Add 1 cup of vegetable broth to the rice and stir until broth has been absorbed, repeat for the remaining 3 cups of broth, stirring frequently and only add additional when the previous has been absorbed.
3.In another large skillet over medium heat, add 1 tablespoon of olive oil and minced garlic. Cook for 1-2 minutes until fragrant.
4.Add chopped leeks, fresh red chile pepper, and red bell pepper. Cook until vegetables have softened, approximately 5 minutes.
5.Add shrimp and scallops to the vegetable skillet, stirring occasionally until cooked through.
6.Add spinach leaves to the vegetable skillet and continue cooking until wilted.
7.Add the cooked rice to the vegetable skillet and stir to combine.
8.Add fresh ground pepper to taste. Serve and enjoy!
