Ingredients

4 large shrimp , shelled and deveined
1 peach , quartered and pitted
1 green pepper , quartered
1 valdalia onion , quartered
1/4 cup chopped peach
1 tablespoon sugar
1/4 cup low sodium soy sauce
1/4 cup vegetable stock
1 teaspoon garlic , minced
1 chile , chopped fine
1/2 cup scallion , sliced

Instructions

1.In a mixing bowl, whisk together sugar, soy sauce, vegetable stock, garlic, scallion, and chile until sugar is dissolved.
2.Add shrimp to the mixture and toss to coat thoroughly.
3.Cover and refrigerate for 30 mins.
4.Thread shrimp, peach, green pepper and onion randomly onto skewers.
5.Preheat grill.
