Ingredients

2 tablespoons oil ( vegetable )
1 lb shrimp , fresh , cleaned and deveined ( slice in half vertically )
12 corn tortillas ( regular size )
1 red pepper ( chopped )
2 green onions ( thinly sliced )
1 large jalapeno , pepper seeded and diced
1 cup corn ( fresh or frozen corn )
1 tablespoon chopped garlic
juice of one lime
10 ounces la victoria green enchilada sauce ( or another store brand )
12 ounces trader joe 's salsa verde ( or another store brand tomatillio sauce )
1 cup grated colby-monterey jack cheese ( combination cheddar & jack )
4 ounces black olives ( sliced )
1/2 cup vegetable oil ( for frying tortillias )
1/3 cup butter
1/3 cup all-purpose flour
2 cups half-and-half cream
1 cup grated colby-monterey jack cheese
Shrimp Fiesta Enchiladas With Cream Sauce is a delicious seafood option with a Mexican twist. Instructions

1.In a pan over medium heat, add 2 tablespoons vegetable oil and sauté the shrimp. Once the shrimp changes color and is cooked through, remove from the pan and set aside.
2.Using the same pan, sauté the red pepper, green onions, jalapeño pepper, corn and garlic for 5 minutes.
3.Add the cooked shrimp back in the pan. Squeeze the lime juice and stir to combine.
4.Preheat the oven to 350°F. In a separate bowl, combine the green enchilada sauce and salsa verde.
5.Heat the 1/2 cup of vegetable oil in a skillet over medium-high heat and fry the tortillas for 30 seconds on each side. Remove from skillet and blot excess oil with paper towels.
6.Spread the enchilada sauce mixture on the bottom of the baking dish. Take each tortilla and add the shrimp mixture on top. Roll it up and put it seam side down in the baking dish.
7.Make the cream sauce by melting the butter in a saucepan. Whisk in the flour and cook for 1 minute. Add the half-and-half cream and continue whisking until it thickens. Add 1 cup of grated cheese and stir until melted.
8.Pour the cream sauce over the enchiladas and sprinkle sliced black olives and remaining grated cheese.
9.Bake in the preheated oven for 30 minutes or until hot and bubbly.
