Ingredients

2/3 cup bulgur ( usually found near rice in supermarkets )
1 2/3 cups water
1 lemon , juice of
12 ounces shrimp , cooked
1 cup cucumber , diced
1 tomatoes , chopped
1/2 cup red onion , chopped
1/2 cup parsley , chopped
2 tablespoons olive oil
1/2 cup feta cheese , crumbled
salt & pepper
Shrimp & Feta Tabbouleh is a twist on the classic Middle Eastern salad that's traditionally made with bulgur, parsley, tomato, and lemon juice. Instructions

1.Rinse the bulgur in cold water and drain well. Place in a large bowl.
2.Bring the water to a boil in a saucepan. Pour over the bulgur and let sit for 30 minutes.
3.Drain any remaining water from the bulgur and add the lemon juice, olive oil, salt, and pepper to the bowl. Mix well.
4.Add the cooked shrimp, cucumber, tomato, onion, parsley, and feta cheese to the bowl. Toss gently until well combined.
5.Serve immediately or chill until ready to serve.
