2 tomatoes , peeled , seeded , and chopped
1 tablespoon Creole seasoning
1/2 cup cognac
1/2 cup shrimp stock
1/3 cup veal stock
1 pound peeled and deveined gulf shrimp
2 tablespoons chopped fresh thyme
3 tablespoons unsalted butter
salt and black pepper to taste

Instructions

1.Preheat oven to 350 degrees F (175 degrees C).

5.While grits are baking, prepare the shrimp cognac. Melt 1/4 cup clarified butter in a large skillet over medium heat. Add minced garlic and leeks and sauté until tender, about 5 minutes.
6.Add mushrooms and tomatoes and cook for another 5 minutes. Stir in Creole seasoning, cognac, shrimp stock, and veal stock and bring to a boil.
7.Add shrimp and thyme and cook until pink, about 3 minutes. Remove from heat and stir in 3 tablespoons unsalted butter. Season with salt and black pepper to taste.
8.Serve the baked cheese grits hot with the shrimp cognac spooned over the top.
