Instructions

1.In a large saucepan, heat the vegetable oil over medium-high heat. Add the chopped onion and rice and sauté until the rice is lightly browned, about 5 minutes.
2.Stir in the cumin, garlic salt, chicken broth, and diced tomatoes. Bring to a boil, then reduce the heat to medium-low. Cover and simmer for 20 minutes, or until the rice is tender and the liquid is absorbed.
3.In a small bowl, mix together the refried beans, garlic salt, and black pepper. Set aside.
4.In a large skillet, heat another tablespoon of vegetable oil over medium-high heat. Add the shrimp and minced garlic and cook until the shrimp are pink and cooked through, about 5 minutes.
5.In a separate small bowl, whisk together the plain yogurt, mayonnaise, and pureed chipotle peppers in adobo sauce.
6.To assemble the burritos, spread a spoonful of the refried beans on each warmed flour tortilla. Top with a portion of the cooked rice, shrimp, shredded Cheddar cheese, and salsa. Drizzle with the chipotle-yogurt sauce, and roll up tightly. Serve immediately.
